Fonio cake

Ingredients:
250g Ibémi Fonio flour
150g sugar
1/2 tsp baking powder
1/2 tsp cinnamon (optional)
4 eggs
100g melted butter
1 lemon
Method:
Wash and zest the lemon without removing the white pith.
Cut the lemon in half and squeeze it to collect the juice.
Mix the Fonio flour, baking powder and cinnamon inside a container.
Add the eggs (one by one), the melted butter, the lemon zest and the lemon juice to the container mixture.
Bake the mixture in the oven at 170c for 40 minutes.
