Fonio Porridge

Ingredients:
50g Ibémi Fonio
35g sugar
1/2L soy or almond milk
1 vanilla pod
4cl salted caramel, honey or marmalade for topping
1 handful of raisins
5cl of rum (optional)
Method:
Place the raisins in a glass of rum to allow it to imbibe during the preparation.
Boil the soy/almond milk.
Add sugar, fonio and vanilla pod to the milk and mix for 5 to 6 minutes while stirring with a wooden spoon.
Cook the mixture on low heat and keep stirring for further 6 minutes.
Remove the pan from the heat and take out the vanilla pod.
Remove the raisins from the rum.
Pour honey / caramel / marmalade at the bottom of each verrine.
Add the fonio milk in the glass and top with the raisins and/or honey / caramel / marmalade.
