Fonio & prawns

Ingredients:
300g Ibémi Fonio
300g of king prawns
250g of concentrated tomato sauce
2 diced peppers
25g of chopped flat leaf parsley
2 diced courgettes
2 diced red onions
1 tsp salt
1/2 tsp of black pepper
2 diced cloves of garlic
5 tsp olive oil
Method:
Mix Fonio, concentrated tomato sauce, salt, black pepper and olive oil in a bowl.
Bring 3 cups of water to a rolling boil in a medium saucepan.
Stir in Fonio, reduce heat to low and mix it for 5 minutes. Drain in sieve with small holes and let cool for 5 minutes.
Cook king prawns, diced peppers, courgettes, red onions and garlic in a separate saucepan for 5 minutes at low heat.
Add mixture from step 3 to the mixture from step 4 and cook for 2 minutes at low heat.
Allow mixture to cool for 3 minutes.
