Preparation time: 20 mins

Servings: 4 persons

Ingredients:

  • 300g Ibémi Fonio

  • 300g of king prawns

  • 250g of concentrated tomato sauce

  • 2 diced peppers

  • 25g of chopped flat leaf parsley

  • 2 diced courgettes

  • 2 diced red onions

  • 1 tsp salt

  • 1/2 tsp of black pepper

  • 2 diced cloves of garlic

  • 5 tsp olive oil


Method:

  1. Mix Fonio, concentrated tomato sauce, salt, black pepper and olive oil in a bowl.

  2. Bring 3 cups of water to a rolling boil in a medium saucepan.

  3. Stir in Fonio, reduce heat to low and mix it for 5 minutes. Drain in sieve with small holes and let cool for 5 minutes.

  4. Cook king prawns, diced peppers, courgettes, red onions and garlic in a separate saucepan for 5 minutes at low heat. 

  5. Add mixture from step 3 to the mixture from step 4 and cook for 2 minutes at low heat. 

  6. Allow mixture to cool for 3 minutes.
